150 g ground oat bran
Vegan egg substitute for 4 eggs
2 tsp cream of tartar baking powder
50 Xucker Light
Cinnamon
Carbonated water
First, mix the vegan eggs with some carbonated water and let them soak for about 2-3 minutes.
In the meantime, put the oat bran flour, baking powder and Xucker in a bowl and mix together. Then stir in the vegan egg substitute with carbonated water until you have a viscous dough. Leave this dough to swell for about 30 minutes. You may need to stir in some more carbonated water. The batter should not be too firm.
Now bake the waffles as usual in the waffle iron.
I used the following topping here:
Coconut yoghurt mixed with lime juice and lime zest. I also made a strawberry sauce from frozen strawberries. Defrost the strawberries, purée them with a magic wand, add some pure vanilla and Xucker leid and you're done.
