LOW CARB ALMOND CRACKER Vegan Thermomix

200 grams of almonds

3 tsp chia seeds

3 teaspoons freshly ground flaxseed

1 tsp herbs de Provence

3/4 tsp salt

10g olive oil


Preheat the oven to 190°. Cover a baking sheet with parchment paper.


Mix chia seeds and flaxseeds with 1/4 cup water and let soak for 15 minutes


Place almonds in mixing bowl, grind 20 sec/speed 10 and scrape down with spatula.


Add the ones soaked in chia seeds and flaxseeds, salt, herbs de Provence and the oil. Then knead for 1 minute on dough setting


Place the dough on the prepared baking sheet, place another piece of baking paper on top and roll out the dough thinly, remove the top baking paper and cut the dough into squares. Bake at 160° for about 30-35 minutes, then leave to cool for another 10 minutes in the open oven.
