Sweet lupine - gyros with cauliflower rice

1 fennel

300gr mushrooms

1 bunch of spring onions

1 clove of garlic

1 pckg sweet lupine gyros

250gr cauliflower rice



Cut the fennel, mushrooms, spring onions and garlic clove into strips.

Sauté everything together with olive oil in a pan.

Add the sweet lupine gyros just before the end of the cooking time.


Cook the cauliflower rice briefly in olive oil in an extra pan.


You can make cauliflower rice very quickly and easily. Buy a good organic cauliflower, wash it and let it dry well. If you have a high-powered blender, you can shred the cauliflower very briefly in it.

If you don't have a high-powered blender, you can simply grate the cauliflower into rice.



I prepare the rice in advance, pack it in portions in a freezer bag and freeze it. That way I always have my rice side dish on hand.
