Ingredients for 2 servings:
1/2 leek
2 tablespoons cottage cheese
4 eggs
2 tablespoons oat bran
a little coconut oil
salt
pepper
turmeric
fresh herbs
Mix eggs with oat bran, cottage cheese and salt, pepper and turmeric, whisk until foamy and let swell. Wash leeks, cut in half and cut into fine strips.
Heat coconut oil in coated pan and sauté leeks. Reduce heat and add egg mixture, stirring once to distribute leeks throughout mixture. Allow to set until the surface is no longer runny.
Then fold and sprinkle with fresh herbs and serve.
