Kaiserschmarrn

3 eggs

2 tbsp low-fat quark

3 tbsp ground oat bran

1 pinch of salt

Erythritol to taste

3 drops of vanilla flavor

Some cinnamon

ground erythritol


Mix egg yolks, oat bran, salt, erithryte and the vanilla flavor. Do not season the dough too sweet as erythritol will be added later. Let it swell for approx. 15 minutes!


During this time, whip the egg white until stiff and fold in!

Let it soak for another 10 minutes!


In a non-stick pan with a lid, bake the dough with a little coconut oil / fat on medium heat until it is almost ready. Turn once with the help of a plate! Let the Schmarrn slide out of the pan onto the plate, put the pan over it and then turn it! Hold on tight.

Then finish baking in the oven!

When the junk is done plucking!

Sprinkle with a little cinnamon and ground erythritol and caramelize briefly! Drape on a plate.
