Chard with white beans and vegan sausage

300 g chard

1 can white beans

2 vegan sausages

3-4 tomatoes

200 g mushrooms

1 onion

olive oil

salt and pepper


Wash the chard, remove the leaves from the stalk. Cut the leaves into fine strips and clean and dice the stalk.


Drain the beans and rinse with filtered water.


Slice the vegan sausages.


Wash the tomatoes, remove the green and cut them into quarters.


Clean the mushrooms and cut them into quarters.


Peel the onion and cut it into fine strips.


Fry the vegan sausages, remove from the pan and set aside.

Sauté the onions together with the stalk of the chard. Add the mushrooms and once the vegetables are well roasted, add the tomatoes and beans. Simmer for 2-3 minutes and then add the leaves of the chard. Season to taste with salt and pepper. Add the sautéed vegan sausage and heat. Season everything once again. Arrange nicely on a plate.
