Vegan parsnip soup from the Thermomix

80g onions

500g parsnips

2-3 tablespoons vegan cream Dr. Oetker

350ml water

150-200ml coconut milk

1-2 tsp vegetable stock


Peel the onions, and shred briefly in the Thermomix on speed 5.


Wash, peel and roughly dice the parsnips. Add to the onions in the Thermomix and also shred briefly once.


Add the water, coconut milk, vegan cream and 1 tsp broth.


Simmer everything at 100° for 15 minutes.


Then puree for 1 minute, slowly increasing the speed. Finally, season again with vegetable broth.
