Vegan cream of zucchini soup

500 g zucchini

500 ml vegetable broth

250 ml coconut milk

1 onion

salt

Pepper


Wash the zucchini and cut into group cubes, peel the onions and also cut into rough cubes. Put everything together with the vegetable broth and coconut milk in a pot and simmer gently for 12-15 minutes.


Once the vegetables are cooked, puree with a magic wand and season with salt.


Arrange in a bowl
