1 small onion
300 g romanesco
100 ml almond milk
100ml vegetable broth
50g parsley
Peel and quarter the onion and place in the Thermomix. Shred briefly on speed five.
Wash the romanesco, remove the stalks and add to the onion. Shred briefly as well.
Add the vegetable stock and water, set to 100° and cook for 15 minutes.
When the soup is ready, please puree for 1 minute on speed eight. Season to taste with salt, pepper and nutmeg.
Pull the parsley from the stems and cut into strips. Add to the hot soup
