Chanterelles meets spinach

75 g spelled (similar to rice)

500 g chanterelles

500 g spinach leaves

1 onion

2 cloves of garlic

250 ml coconut milk

salt

pepper

Vegetable broth

Coconut oil


Prepare the spelled according to the instructions on the packet


Clean the chanterelles well and set aside.

Wash the spinach leaves, spin dry and set aside. Peel the onions and garlic and cut into small cubes.


Drain some coconut oil in a large saucepan, fry the onions and garlic until translucent, add the chanterelles and roast for about 3-5 minutes. Add the spinach leaves and as soon as they have collapsed, deglaze with coconut milk.

Season to taste with salt, pepper and vegetable stock. Fold in the spelled and arrange in a bowl.
