Cauliflower rice

All you need is a cauliflower, wash it and dry it well. Maybe you just leave it until it is properly dried through.


Then remove the green leaves, the stalk and divide the florets.

Now you need a good blender. I personally use my Thermomix for this. I fill only a quarter in the Thermomix, turn briefly on speed 5 and immediately back down.


If you shred too long, you get puree....


You can use any other high-powered blender for this, though.


Or the good old fashioned way: take a grater and grate the cauliflower over it.


I always make cauliflower rice in a big batch, then pack it in freezer bags and freeze it.


That way I always have portions of my cauliflower rice on hand
