1 red bell bell pepper
1 small eggplant
5-6 mushrooms
1 small zucchini
3-5 spring onions
olive oil
salt and pepper
Oregano
Here you need to preheat your oven. Please set it to 180°.
Wash the vegetables, cut the eggplants into rough strips and put them on a zewa sprinkled with salt to soak for 10 minutes.
Quarter the peppers, remove the seeds and put them in the baking dish.
Cut the zucchini into slices and put them in the baking dish.
Clean the mushrooms and put them in the baking dish.
Finally, put the eggplants in the baking dish.
Wash the spring onions, remove the stalk and place over the vegetables.
Mix the olive oil with salt and pepper and pour it over the vegetables. At the end put the oregano on top.
Now put the vegetables in the oven for about 20 minutes. It goes very well with hummus.
